Sake, or nihonshu, the ancient brewed rice wine made throughout Japan, has gained international fame as a superb partner for food—you can find a perfect sake for nearly every dish. Our list is primed for pairing with the menu; the aromas, acidity, and complexity make ideal accompaniments to both

the Japanese and Spanish elements.

When Hasekura and his crew arrived in Spain, they first came

to a beautiful city on Spain’s southwest coast: Sanlúcar de

Barrameda, home to one of the most famous styles of sherry,

manzanilla. Throughout the region, from Sanlúcar to Jerez

de la Frontera, the ocean air and chalky soils, along with a

unique winemaking process, make the iconic fortified wine

called sherry. From salty, floral manzanilla to rich, nutty

oloroso, sherry is designed as a match for food, and works

beautifully with both Japanese and Spanish flavors. We also

have a growing selection of unfortified white wines from the

region, one of the most exciting developments in Spanish

Vermouth

Spanish vermouth, or vermút, is more than just a drink—it's a beloved tradition. Typically enjoyed as an aperitif, it’s often sipped over ice with a slice of orange or an olive, accompanied by tapas. In Spain, the culture of la hora del vermut (vermouth hour) is a cherished ritual, bringing friends and family together at bars or bodegas to enjoy its bittersweet complexity.

Vermouth’s aromatics shine with the right garnish. A twist of lemon or orange peel enhances its citrus and herbal notes. An olive adds a subtle briny contrast, balancing the vermouth’s bitterness. The combination of citrus peel, an olive, and jamón deepens both aroma and complexity, amplifying its herbal and savory layers. Each garnish elevates the vermouth’s character, making it an even more aromatic and nuanced.

The Hasekura expedition stayed in Spain for eight months

and traveled across the country on the King’s dime, as they

went on to meet the Pope in Rome. They no doubt tasted the

wines of the Iberian peninsula—an area that has been making wine for thousands of years—during their journey. Here, we are sharing a wide selection of the best producers in Spain and neighboring Portugal, showing the terroir—the sum total of the climate, the soil, and the winemaking expertise of Iberian winemakers—of Iberia. Library wines from the region show how age-worthy some of these producers’ bottles are, and offer a remarkable taste of history.

Japan has long been a country that appreciates the wines of

the world—some of its first tastes of wine were brought in

barrels by Portuguese missionaries in the 16th century, just

prior to Hasekura’s journey. Since then, a dedication to fine

wines has grown, and Japanese winemakers have traveled

the globe to make their own—our list features bottles from

some of the world’s most prestigious regions, made by expat

Japanese winemakers. Meanwhile, the climate and soils of

Hokkaido, the northernmost island of Japan, are primed for

winegrowing; cold nights and warm days, along with fertile

volcanic soil, make for one of the most exciting and unique

winemaking regions today.
